Ingredients

  • Puff pastry
  • Lobster (cooked)
  • Heavy cream
  • Butter
  • Shallots
  • White wine
  • Fish stock
  • Egg yolks
  • Salt and pepper

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Roll out the puff pastry on a lightly floured surface and cut into circles.
  3. Cut smaller circles in half of the larger circles to create a border.
  4. Stack the smaller circles on top of the larger ones and brush them with beaten egg yolk.
  5. Bake for 15–20 minutes or until golden brown.
  6. In a saucepan, melt butter, sauté shallots until translucent, then add lobster, white wine, and fish stock; simmer briefly.
  7. Stir in heavy cream, season with salt and pepper, and let thicken.
  8. Fill each baked pastry shell with hot lobster mixture and serve immediately.
