  • 2 oeufs

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. In a large bowl, combine 200 g of flour, 100 g of melted butter, and 50 ml of olive oil. Mix until you achieve a grainy texture with small butter lumps visible. Knead the dough just enough for it to come together, then refrigerate for 15 minutes.
  3. Peel and cube 300 g of potatoes. Steam them for about 10 minutes until slightly tender yet firm. In another bowl, mix the potatoes, 150 g of chopped speck, 2 eggs, and 100 ml of crème fraîche until evenly coated.
  4. On a floured surface, roll out the dough into a 30 cm circle. Place it in a 23 cm tart pan, letting the excess hang over the edges. Pour the potato and speck mixture evenly into the pastry. Fold the edges of the dough over the filling to create a decorative border.
  5. Bake the tourte in the preheated oven for 40-45 minutes, until the crust is golden and the filling bubbles at the edges.
