- Peel and slice the potatoes into thin rounds (about 3 mm thick). Optionally, use a mandoline for uniformity. Heat 50 ml of olive oil in a non-stick skillet over medium heat.
- Add the sliced potatoes to the hot oil. Stir delicately to coat them, cooking for 10-12 minutes, stirring occasionally until tender but not golden.
- When potatoes are almost done, add the sliced onion and cook for an additional 2 minutes until transparent. Adjust the heat to prevent browning.
- In a large bowl, beat the eggs with a pinch of salt and pepper. Gently fold in the cooked potatoes and onions, being careful not to break them.
- Add 50 ml of olive oil to the skillet over medium heat. Pour in the potato-egg mixture and cook for 5 minutes, gently lifting the edges with a spatula.
- Once golden on the bottom, carefully flip the tortilla using a large plate, sliding it back into the skillet to cook the other side for 5-7 minutes until set.
- After cooking, remove from the skillet and let rest on a cutting board for 5 minutes before slicing into portions.
