  • 6 œufs
  • 1 oignon, émincé
  • 100 ml huile d'olive

Instructions

  1. Peel and slice the potatoes into thin rounds (about 3 mm thick). Optionally, use a mandoline for uniformity. Heat 50 ml of olive oil in a non-stick skillet over medium heat.
  2. Add the sliced potatoes to the hot oil. Stir delicately to coat them, cooking for 10-12 minutes, stirring occasionally until tender but not golden.
  3. When potatoes are almost done, add the sliced onion and cook for an additional 2 minutes until transparent. Adjust the heat to prevent browning.
  4. In a large bowl, beat the eggs with a pinch of salt and pepper. Gently fold in the cooked potatoes and onions, being careful not to break them.
  5. Add 50 ml of olive oil to the skillet over medium heat. Pour in the potato-egg mixture and cook for 5 minutes, gently lifting the edges with a spatula.
  6. Once golden on the bottom, carefully flip the tortilla using a large plate, sliding it back into the skillet to cook the other side for 5-7 minutes until set.
  7. After cooking, remove from the skillet and let rest on a cutting board for 5 minutes before slicing into portions.
