- 4 oignons rouges, émincés
- 50 g beurre
- 60 ml vinaigre de vin rouge
- 40 g sucre brun
- 1 rouleau pâte feuilletée (environ 250 g)
- 80 g parmesan, râpé
- 1 brin de thym frais
Instructions
- 1. Preheat your oven to 190°C (375°F).
- 2. In a 23 cm cast iron skillet, melt 50 g of butter over medium heat. Add the sliced red onions and cook for about 15 minutes, stirring regularly, until they are translucent and starting to brown.
- 3. Add 60 ml of red wine vinegar and 40 g of brown sugar to the skillet. Stir well and let it cook for an additional 5 to 10 minutes until the mixture turns into a golden, syrupy caramel.
- 4. Remove the skillet from the heat and spread the caramelized onions evenly at the bottom. Place the puff pastry over the top, tucking in the edges around the inside of the skillet.
- 5. Bake in the preheated oven for 30 to 35 minutes, until the pastry is golden brown and slightly pulls away from the pan's edges.
- 6. Allow the tart to rest for 10 minutes before inverting it onto a serving plate.
- 7. Slice and serve warm or at room temperature, garnished with fresh thyme if desired.
