Instructions

  1. Prepare the Crust: In a large mixing bowl, combine 250 g flour and 70 g sugar. Add the 125 g cold butter and mix with your fingers until you achieve a sandy texture. Incorporate 1 large egg and knead lightly to form a ball without overworking the dough. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. Pre-Cook the Apples: Preheat your oven to 190°C (375°F). Peel and cut 4 apples into wedges. Heat a skillet over medium heat, add a bit of butter, then cook the apples for 5 to 7 minutes until just softened but still firm. Set aside.
  3. Roll Out the Dough: Remove the dough from the refrigerator and roll out on a floured surface until it's about 3 mm thick. Place it into a 23 cm tart pan, prick with a fork to prevent bubbles, and refrigerate for another 10 minutes.
  4. Prepare the Filling: In a bowl, whisk together 3 eggs and 100 g sugar until light and frothy. Add 200 ml heavy cream and mix until smooth. Carefully fold in the pre-cooked apple slices.
  5. Assemble and Bake: Pour the apple and cream mixture over the chilled crust. Bake in the preheated oven for 35 to 40 minutes, until the edges are golden and the center slightly jiggles.
  6. Cool and Serve: Allow the tart to cool in the pan for 30 minutes before removing it. This will help set the filling. Serve warm or at room temperature.
