- 250 g chocolat noir de couverture (minimum 64 % cacao)
- 25 g framboises lyophilisées, grossièrement écrasées

Instructions
- 1. Prepare the mold and inclusions: Ensure your chocolate bar mold (or a 20×10 cm loaf pan) is fully dry and clean. Scatter half the crushed freeze-dried raspberries in an even, spaced-out layer across the bottom of the mold.
- 2. Temper the chocolate: Add the dark couverture chocolate and cocoa butter to a heatproof bowl. Melt gently over a bain-marie, stirring often, until the temperature reaches 46°C (115°F). Remove from heat and cool, stirring, until it hits 28°C (82°F). Return over the bain-marie briefly to warm to 31–32°C (88–90°F).
- 3. First chocolate pour: Pour two-thirds of the tempered chocolate into the mold over the raspberries. Gently tap the mold to remove air bubbles.
- 4. Layer and finish: Quickly scatter the remaining half of the freeze-dried raspberries and the pinch of fleur de sel evenly on top, making sure raspberries don’t touch the mold’s edges. Pour the rest of the chocolate over everything, smoothing the top with the back of a spoon.
- 5. Optional finish: If you prefer a slightly sweeter bar or if your raspberries are quite sour, sift the confectioners’ sugar over the top now.
- 6. Set and unmold: Let the chocolate bar set at room temperature (20–22°C) for at least 1 hour—do not refrigerate. Once firm and matte, invert the mold onto a board; if needed, let rest 15–20 minutes more.
