  • 4 courgettes moyennes
  • 1 oignon, haché
  • 3 gousses d’ail, émincées
  • 1 litre de bouillon de légumes
  • 200 ml de crème fraîche
  • 2 cuil. à soupe d’huile d’olive
  • Sel au goût
  • Poivre au goût

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  2. Stir in the minced garlic and sauté for another 2 minutes until golden and fragrant, being careful not to burn the garlic.
  3. Add the diced zucchini to the pot and cook for 5 minutes, stirring frequently until slightly softened but still crunchy.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes until the zucchini is tender.
  5. Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer batches to a standard blender.
  6. Stir in the fresh cream and heat gently over low for a few minutes, ensuring the soup does not boil.
  7. Season with salt and pepper to taste and serve hot, garnished with olive oil or fresh herbs if desired.
