Ingredients

Scale
  • 2 pounds (900 g) chicken wings, split at the joint and tips discarded
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper (freshly ground)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust for desired heat)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon black pepper (freshly ground)
  • 12 teaspoons red chili flakes (adjust for desired heat)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sliced green onions
  • Sesame seeds

Instructions

  1. Preheat your oven to 425°F (220°C). This high temperature is key for achieving that crispy skin on the wings.
  2. In a large bowl, combine the chicken wings with vegetable oil, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. Toss well to ensure every wing is evenly coated.
  3. Spread the seasoned wings in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through, until the wings are golden brown and crispy.
  4. While the wings are baking, prepare the spicy black pepper sauce. In a medium saucepan over medium heat, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, minced ginger, freshly ground black pepper, and red chili flakes. Stir well and bring to a simmer.
  5. In a small bowl, mix cornstarch with water until smooth, then add it to the simmering sauce. Stir constantly until the sauce thickens, about 2-3 minutes.
  6. Once the wings are done baking, remove them from the oven and toss them in the spicy black pepper sauce until fully coated.
  7. Return the coated wings to the baking sheet and bake for an additional 5 minutes to set the sauce.
  8. Finally, remove the wings from the oven, garnish with sliced green onions and sesame seeds, and serve hot.
