Description
This Watermelon Mojito Mocktail combines juicy watermelon, zesty lime, and fragrant mint for a refreshing summer drink. Perfect for any gathering, it’s a guilt-free treat that hydrates and delights.
Ingredients
Scale
- 4 cups fresh watermelon, cubed (seedless preferred)
- 1/4 cup fresh lime juice (about 2–3 limes)
- 10–12 fresh mint leaves, plus extra for garnish
- 2 tablespoons honey or agave syrup (adjust to taste)
- 1 cup sparkling water (chilled)
- Ice cubes
- Lime wedges (for garnish)
Instructions
- Prepare the watermelon: Begin by cutting 4 cups of fresh watermelon into cubes. Aim for seedless watermelon for a smoother drink. You can use a melon baller for a fun presentation or simply cube it with a knife. Place the watermelon cubes in a blender.
- Blend the watermelon: Blend the watermelon on high until fully liquefied, about 30 seconds. You want a smooth consistency, so ensure there are no chunky bits left. If your blender struggles, you can add a splash of water to help it along.
- Strain the juice (optional): If you prefer a smoother drink, strain the blended watermelon juice through a fine mesh sieve into a large bowl or pitcher. This step is optional; I personally love the texture of the pulp. However, if you do strain, use a spoon to press the pulp for maximum juice extraction.
- Add lime juice: Pour in 1/4 cup of fresh lime juice (about 2-3 limes), adjusting to taste. Stir the mixture gently with a spoon to combine. The lime juice adds a tangy kick that cuts through the sweetness of the watermelon.
- Incorporate mint: Gently tear 10-12 fresh mint leaves and add them to the mixture. Use your hands to release their essential oils. Stir again, allowing the mint to infuse the drink. Be careful not to over-muddle, as this can release bitterness from the mint stems.
- Sweeten the mix: Add 2 tablespoons of honey or agave syrup, adjusting to your desired sweetness. Stir well until the sweetener is fully dissolved. Taste the mixture and adjust the sweetness if needed; you can always add more but can't take it away!
- Chill: Place the mixture in the refrigerator for about 10 minutes to chill. Alternatively, you can serve immediately over ice if you're in a hurry.
- Serve: Fill a glass with ice cubes, pour the watermelon mixture over the ice, and top with 1 cup of chilled sparkling water. Stir gently to combine and maintain the fizz.
- Garnish: Add lime wedges and a few extra mint leaves for garnish. Serve immediately and enjoy the refreshing taste of summer!
