Ingredients
- 250 g farine
- 125 g beurre froid
- 1 œuf
- 1/2 cuillère à café sel
- 200 g jambon cuit, en dés
- 150 g cheddar râpé
- 250 ml crème fraîche
- 3 œufs
- 200 g légumes variés (courgettes, poivrons, champignons)
Instructions
- Prepare the pastry: In a large bowl, combine the flour and salt. Cut in the cold butter until it resembles coarse crumbs. Add the egg and mix just until a dough forms. Wrap in plastic and chill for 30 minutes.
- Preheat the oven to 190°C (375°F).
- Roll out the pastry on a floured surface to about 3mm thick. Place it in a 23 cm (9-inch) tart dish and prick the bottom with a fork.
- For the filling: In a bowl, whisk the eggs with the crème fraîche. Fold in the diced ham, grated cheddar, and vegetables. Season with salt and pepper.
- Pour the filling into the pastry shell, smoothing the top. Bake for 35-40 minutes, until golden on top and set in the center.
- Allow to cool for 10 minutes before slicing and serving warm or at room temperature.

Keywords: Experiment with different meats (like chicken) or cheeses (such as Gruyère) to suit your taste. Ensure your butter is cold to keep the pastry flaky. Avoid overworking the dough. If using frozen vegetables, make sure to drain them to prevent a watery filling. This quiche keeps well in the fridge for up to 3 days or can be frozen for 2 months. Reheat in the oven for best results.
