- 100 g guanciale, coupé en dés

- 100 ml crème fraîche

- Cook the spaghetti in a large pot of boiling salted water according to the package instructions until al dente, about 10 minutes. Reserve 1 cup of pasta water, then drain the rest.
- In the same pot (off heat), add the diced guanciale and cook over medium heat for 5 to 7 minutes until crispy, retaining the fat in the pot.
- Add the sliced mushrooms to the pot with the guanciale fat and sauté over medium heat for about 5 minutes until golden and tender.
- Combine the drained spaghetti with the guanciale and mushrooms in the pot, stirring to coat the pasta in fats. Slowly incorporate reserved pasta water, one tablespoon at a time, to create a creamy sauce.
- In a separate bowl, whisk together egg yolks, grated parmesan, and crème fraîche until smooth. Remove the pot from heat and quickly mix this sauce into the pasta, stirring continuously to prevent the eggs from scrambling.
