  • 2 bell peppers (red & yellow)
  • 1 onion
  • 2 tablespoons oil
  • 500 ml vegetable or chicken broth
  • 1 teaspoon sweet paprika
  • Salt and pepper
  • Optional: 1 teaspoon dried herbs

Instructions

  1. Begin by gathering all your ingredients and preparing your workspace. Chop the chicken breast into bite-sized pieces and set aside. Dice the onion and slice the bell peppers into strips.
  2. In a large frying pan, heat 2 tablespoons of oil over medium heat. Once the oil is shimmering (about 1-2 minutes), add the diced onions. Sauté for about 3-4 minutes until the onions are translucent, stirring occasionally to avoid burning.
  3. Add the chicken pieces to the pan, seasoning with salt, pepper, and 1 teaspoon of paprika. Cook for 5-7 minutes, stirring frequently, until the chicken is golden brown and cooked through. Ensure it reaches an internal temperature of 75°C (165°F) to be safe for consumption.
  4. Once the chicken is cooked, incorporate the sliced bell peppers into the pan. Sauté for an additional 3-4 minutes until the peppers are tender but still retain some crunch.
  5. Add the long-grain rice to the pan, stirring to combine with the chicken and vegetables. Toast the rice for about 1-2 minutes, allowing it to absorb the flavors from the pan.
  6. Pour in 500 ml of vegetable or chicken broth, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pan, and let it simmer for 15 minutes. Avoid lifting the lid during this time to retain steam.
  7. After 15 minutes, check the rice; it should be fluffy and the liquid absorbed. If the rice is still hard, add a splash more broth and cover for another 2-3 minutes.
  8. Once the rice is cooked, taste and adjust seasoning with more salt, pepper, or optional dried herbs if desired. Remove from heat and let it sit covered for about 5 minutes before serving.
