Ingredients
- 4 œufs durs
- 200 g d'épinards frais
- 100 g de fromage frais
- 1 c. à soupe de mayonnaise
- 1 c. à café de moutarde
- Sel, au goût
- Poivre, au goût (facultatif)
Instructions
- Boil the Eggs: Place the eggs in a small saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat and simmer for 10 minutes. Afterward, transfer the eggs to an ice bath to cool for about 5 minutes.
- Sauté the Spinach: While the eggs cool, heat a skillet over medium heat. Add the fresh spinach and sauté it for 3-5 minutes until wilted and the moisture has evaporated. Season with a pinch of salt.
- Peel the Eggs: Once cooled, carefully peel the eggs under running water to make it easier. Cut them in half lengthwise and place the yolks in a mixing bowl.
- Make the Filling: Mash the egg yolks with a fork, then add the sautéed spinach, cream cheese, mayonnaise, mustard, salt, and pepper. Mix until smooth and creamy. Taste and adjust seasoning as necessary.
- Fill the Eggs: Spoon or pipe the filling back into the egg whites, heaping it slightly for presentation.
- Chill and Serve: Refrigerate the filled eggs for about 5 minutes before serving to allow the filling to firm up slightly. Arrange on a serving platter and enjoy!

Keywords: For a twist, you can substitute the spinach with finely chopped cooked broccoli or even roasted red peppers for a different flavor. These eggs can be prepared a day in advance; just fill them just before serving to maintain the best texture. Experiment with herbs and spices like paprika or fresh chives in the filling for added depth of flavor.
