Ingredients
- 2 grandes courgettes
- 1 cuillère à café de sel
- 100 g de farine tout usage
- 2 pièces d'œufs
- 80 g de parmesan râpé
- 1 cuillère à café de poudre à lever
- 2 cuillères à soupe d'huile d'olive
- Poivre au goût
Instructions
- Rasp the zucchinis using a coarse grater and place them in a mixing bowl. Add the salt, mix well, and let it rest for 10 minutes.
- After 10 minutes, transfer the zucchini to a clean kitchen towel and squeeze out the excess water until they are as dry as possible.
- In another bowl, combine the flour and baking powder; mix to distribute evenly.
- Gently fold the drained zucchini into the dry ingredient mixture with a spatula.
- In a small bowl, beat the eggs and then add them to the zucchini-flour mixture along with the grated Parmesan. Stir until just combined, ensuring not to overmix to keep the texture light.
- Preheat the oven to 175°C (350°F). Pour the mixture into a greased 20 cm (8 inch) baking dish and bake for 30-35 minutes until golden brown. A toothpick inserted in the center should come out clean with a few moist crumbs.
- Remove from the oven and allow to cool for 10 minutes before slicing.
