  • 250 g biscuits digestive
  • 80 g beurre fondu
  • 300 g yaourt grec
  • 200 g crème fraîche
  • 4 feuilles de gélatine
  • 100 g sucre glace
  • 200 g fraises fraîches

Instructions

  1. Prepare the molds by placing six mini cake rings on a tray, ensuring they are stable.
  2. Crush the digestive biscuits into fine crumbs, resembling sand. Mix in the melted butter until well combined.
  3. Press the biscuit mixture firmly into the base of each cake ring, smoothing the surface with the back of a spoon.
  4. Soak the gelatin sheets in cold water for about 5 minutes. In a separate bowl, mix Greek yogurt, crème fraîche, and powdered sugar until smooth.
  5. Squeeze out excess water from the softened gelatin, then dissolve it over a double boiler. Add a spoonful of the yogurt mixture to the melted gelatin, stirring thoroughly before combining it back with the yogurt mixture.
  6. Pour the creamy filling into the cookie crusts, smoothing the top evenly.
  7. Cover with plastic wrap and refrigerate for a minimum of 4 hours, allowing them to set.
  8. Once set, gently remove the cakes from the rings and top each with fresh strawberries just before serving.
