Achieving the perfect mille-feuille hinges on the use of high-fat butter, which ensures each layer is light and airy, creating a beautiful contrast in texture. Whether you choose to enhance your mille-feuille with fresh fruits or chocolate, it’s a treat that’s bound to satisfy your sweet tooth. With a preparation time of just 45 minutes, this dessert can transform any meal into a memorable celebration.

Ingredients

Scale
  • 250 g beurre à haute teneur en matières grasses
  • 250 g farine
  • 1/2 cuillère à café sel
  • 125 ml eau glacée
  • 500 ml lait entier
  • 150 g sucre
  • 4 jaunes d'œufs
  • 50 g maïzena
  • 1 gousse vanille

Instructions

  1. 1. Prepare the Puff Pastry: In a large bowl, mix the flour and salt. Cut in the cold butter using your fingers until the mixture resembles sand. Gradually add in the ice-cold water until the dough forms; avoid overworking it. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. 2. Roll Out the Dough: Preheat your oven to 200°C (392°F). On a lightly floured surface, roll the dough into a rectangle, about 5mm thick. Fold the dough into thirds like a letter. Repeat this two more times to create layers.
  3. 3. Bake the Pastry: Roll the dough again and cut into rectangles measuring 10×20 cm. Place on a baking sheet lined with parchment paper. Prick with a fork to avoid puffing. Bake for 25-30 minutes until golden and crispy.
  4. 4. Make the Pastry Cream: In a saucepan, heat the milk until boiling. In a bowl, whisk the egg yolks and sugar until pale, then stir in the cornstarch. Gradually add the hot milk to the egg mixture while whisking. Return to the saucepan and cook over medium heat until thickened. Stir in the vanilla seeds. Let cool.
  5. 5. Assemble: Once cooled, place one pastry rectangle on a serving plate. Spread a layer of pastry cream on top, add another rectangle, and repeat. Top with the final pastry rectangle and dust with powdered sugar.
  6. 6. Chill: Refrigerate for at least one hour before slicing to allow the cream to set.
  7. 7. Serve: Carefully cut into portions with a sharp knife using a sawing motion to keep layers intact. Serve immediately for the best texture.
