  • 750 ml d'alcool à 95°
  • 500 g de sucre
  • 1 litre d'eau

Instructions

  1. Rinse the lemons thoroughly under cold water, then use a peeler to remove the zest, avoiding the bitter white pith. Cut the zest into thin strips and place them in a clean, airtight glass jar.
  2. Pour 750 ml of alcohol over the lemon zest, seal the jar tightly, and shake gently to combine. Let the mixture infuse at room temperature, away from direct sunlight, for 7 to 10 days.
  3. After the infusion period, prepare the simple syrup by combining 500 g of sugar with 1 liter of water in a saucepan. Heat gently, stirring until the sugar completely dissolves. Do not boil. Remove from heat and let the syrup cool completely.
  4. Once the infusion is ready, strain the mixture through a fine mesh sieve into a clean bowl, discarding the zest. Add the cooled syrup to the infused alcohol, mixing well. Taste and adjust sweetness if necessary.
  5. Pour the finished limoncello into clean, airtight bottles and store in the freezer. This liqueur remains high-quality for up to six months.
