- 6 citrons bio
- 750 ml d'alcool à 95°
- 500 g de sucre
- 1 litre d'eau

- Rinse the lemons thoroughly under cold water, then use a peeler to remove the zest, avoiding the bitter white pith. Cut the zest into thin strips and place them in a clean, airtight glass jar.
- Pour 750 ml of alcohol over the lemon zest, seal the jar tightly, and shake gently to combine. Let the mixture infuse at room temperature, away from direct sunlight, for 7 to 10 days.
- After the infusion period, prepare the simple syrup by combining 500 g of sugar with 1 liter of water in a saucepan. Heat gently, stirring until the sugar completely dissolves. Do not boil. Remove from heat and let the syrup cool completely.
- Once the infusion is ready, strain the mixture through a fine mesh sieve into a clean bowl, discarding the zest. Add the cooled syrup to the infused alcohol, mixing well. Taste and adjust sweetness if necessary.
- Pour the finished limoncello into clean, airtight bottles and store in the freezer. This liqueur remains high-quality for up to six months.
