Ingredients

Scale
  • 200 g chocolat noir
  • 200 g chocolat au lait
  • 200 g chocolat blanc
  • 100 ml crème liquide

Instructions

  1. Prepare your mise en place by gathering all ingredients and tools, including chocolates, cream, and a heatproof bowl for the bain-marie.
  2. In a saucepan, heat water over medium heat. Place a heatproof bowl over the saucepan, ensuring it doesn’t touch the water. Add the chopped chocolate into the bowl.
  3. Stir gently until the chocolate melts completely and is smooth with no lumps.
  4. Remove the bowl from heat before the chocolate is fully melted. Continue stirring until it reaches 32°C for dark chocolate and 30°C for milk and white chocolate. This step prevents crystallization.
  5. Allow the chocolate to cool slightly but not too much; it should be used immediately for recipes like ganache or mousse.
  6. Store any leftover melted chocolate in a cool, dry place. It can stay at room temperature for 2 to 4 days.

Keywords: For a richer ganache, consider using double the amount of cream or using a higher fat content cream. Experiment with flavored extracts, like vanilla or espresso, to enhance the chocolate's natural flavor. Always keep tools dry to avoid any graininess in the melted chocolate.
