  • 1 large Egg yolk
  • 1 teaspoon Vanilla extract
  • 1 cup Peach slices (For garnish)
  • 1 tablespoon Honey drizzle
  • 1/2 cup Crushed graham crackers (For topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a large mixing bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed for about 3-4 minutes until the mixture is light and fluffy.
  4. Add in the eggs, honey, whole milk, and vanilla extract to the butter mixture. Beat for another 2 minutes until well incorporated.
  5. Gradually add the dry ingredient mixture into the wet ingredients. Mix on low speed until just combined.
  6. Gently fold in the diced peaches with a spatula, ensuring they are evenly distributed throughout the batter.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
