- Preheat your oven to 400°F (200°C). Grease a mini muffin tin with non-stick spray or butter to ensure easy release.
- In a large bowl, combine 1 cup of cornmeal, 1 cup of all-purpose flour, 1/4 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk these dry ingredients together until well mixed.
- In a separate bowl, mix together 1/2 cup of melted butter, 1/4 cup of honey, 1 cup of buttermilk, and 2 eggs. Whisk until the mixture is smooth and creamy.

- Using a spoon or a small cookie scoop, fill each cup of the muffin tin about 3/4 full with the batter.
