- 1 loaf ciabatta bread (sliced lengthwise, about 1/2-inch thick)
- 4 oz shredded mozzarella cheese (freshly shredded preferred for better melting)
- 1 batch cooked chicken Parmesan (warm, about 3–4 cutlets)
Instructions
- Preheat your oven to 350°F (175°C). This will ensure that the bread warms perfectly while the cheese melts.
- In a skillet, heat 3 tablespoons of extra-virgin olive oil over medium heat. Allow the oil to shimmer but not smoke—this usually takes about 2 minutes.
- While the oil heats, slice your ciabatta loaf lengthwise into two pieces. Make sure the slices are about 1/2-inch thick to hold the filling well.
- Once the oil is hot, place the ciabatta halves cut-side down in the skillet. Toast them for about 2-3 minutes until they are golden brown and crispy. Avoid burning them; keep an eye on the color!
- Remove the toasted ciabatta from the skillet and set it aside. In the same skillet, add the warm cooked chicken Parmesan cutlets. If they are not warm, heat for about 2-3 minutes until heated through.
- While the chicken is warming, sprinkle 4 ounces of shredded mozzarella cheese generously over the chicken. Cover the skillet with a lid for 1-2 minutes to allow the cheese to melt beautifully.
- Once the cheese is melted, carefully place the cheesy chicken on the toasted ciabatta. Spoon about 1 cup of red sauce over the top, allowing it to soak slightly into the bread.
- Top with the other half of the ciabatta and press down gently, ensuring all ingredients meld together.
- For extra warmth and to meld the flavors, you can return the sandwich to the skillet for an additional minute on each side, or place it in the oven for about 5 minutes.
- Slice the sandwich in half and serve immediately while hot and gooey!
