  • 2 chicken breasts (220g or 7oz each, skinless and boneless)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter (30g)
  • 7 oz mushrooms, sliced about 1/8" thick (approximately 2 full cups, 200g)
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon thyme leaves
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese, sliced (or any cheese that melts well, 80g)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). This allows the chicken to cook evenly and ensures a crispy exterior.
  2. While the oven is heating, prepare the chicken breasts. Place each breast between two sheets of plastic wrap and gently pound them to about 1/2 inch thick.
  3. Season the chicken breasts on both sides with salt and black pepper.
  4. In a large skillet, melt the unsalted butter over medium heat. Allow it to foam before adding the sliced mushrooms. Cook the mushrooms for about 5-7 minutes until they are golden brown and have released their moisture.
  5. Add the minced garlic and thyme to the skillet with the mushrooms. Cook for an additional 1-2 minutes, until fragrant.
  6. Stir in the fresh baby spinach and cook until just wilted—this should take about 1-2 minutes. Remove the skillet from heat and let the filling cool slightly.
  7. Once cooled, stir in the mozzarella cheese until well combined.
  8. Divide the mushroom and cheese mixture equally among the chicken breasts. Carefully spoon the filling onto one side of each breast, then fold the other side over to encase the filling. Use toothpicks to secure the edges if necessary.
  9. In the same skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  10. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  11. Once done, remove from the oven and let the chicken rest for 5 minutes before slicing.
