  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped (or 2 tablespoons dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh oregano leaves (or 1 teaspoon dried)
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with cooking spray or oil.
  2. In a large mixing bowl, combine 2 lbs of ground chicken, 1 cup of breadcrumbs, 1 cup of shredded mozzarella cheese, and 1/2 cup of grated Parmesan cheese. Use your hands to mix until just combined.
  3. Add in 1/2 cup finely chopped onion, 3 cloves of minced garlic, 1/4 cup of chopped fresh parsley, 1 tablespoon of fresh thyme, and 1 tablespoon of fresh oregano. Mix gently to incorporate the herbs and aromatics evenly.
  4. In a separate bowl, whisk together 1 large egg, 1/4 cup of milk, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of crushed red pepper flakes (if using). Once combined, add this mixture to the chicken mixture and combine until just mixed.
  5. Pour the meat mixture into the prepared loaf pan, pressing it gently to shape it into a loaf. Smooth the top with a spatula for an even bake.
  6. In a small bowl, mix together 1/2 cup of ketchup, 1 tablespoon of Worcestershire sauce, 1 tablespoon of brown sugar, and 1 teaspoon of Dijon mustard to create the topping. Spread this mixture evenly over the top of the meatloaf.
  7. Bake in the preheated oven for about 60 minutes or until the internal temperature reaches 165°F (74°C).
  8. Once done, remove from the oven and let it rest for 10-15 minutes before slicing.
