- 2 lbs ground chicken
- 1 cup breadcrumbs (plain or Italian seasoned)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup finely chopped onion
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped (or 2 tablespoons dried)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 tablespoon fresh oregano leaves (or 1 teaspoon dried)
- 1 large egg
- 1/4 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional, for heat)
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon Dijon mustard
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with cooking spray or oil.
- In a large mixing bowl, combine 2 lbs of ground chicken, 1 cup of breadcrumbs, 1 cup of shredded mozzarella cheese, and 1/2 cup of grated Parmesan cheese. Use your hands to mix until just combined.
- Add in 1/2 cup finely chopped onion, 3 cloves of minced garlic, 1/4 cup of chopped fresh parsley, 1 tablespoon of fresh thyme, and 1 tablespoon of fresh oregano. Mix gently to incorporate the herbs and aromatics evenly.
- In a separate bowl, whisk together 1 large egg, 1/4 cup of milk, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of crushed red pepper flakes (if using). Once combined, add this mixture to the chicken mixture and combine until just mixed.
- Pour the meat mixture into the prepared loaf pan, pressing it gently to shape it into a loaf. Smooth the top with a spatula for an even bake.
- In a small bowl, mix together 1/2 cup of ketchup, 1 tablespoon of Worcestershire sauce, 1 tablespoon of brown sugar, and 1 teaspoon of Dijon mustard to create the topping. Spread this mixture evenly over the top of the meatloaf.
- Bake in the preheated oven for about 60 minutes or until the internal temperature reaches 165°F (74°C).
- Once done, remove from the oven and let it rest for 10-15 minutes before slicing.
