  • 1/2 cuillère à café sel
  • 1 oeuf
  • 60 g farine
  • 50 g fromage râpé

Instructions

  1. Rinse and grate the zucchinis using a coarse grater. Place in a bowl and sprinkle with salt. Mix well and let it sit for about 10 minutes to allow moisture to drain.
  2. After 10 minutes, place a clean kitchen towel over the zucchini and squeeze out excess liquid to ensure crispier fritters.
  3. Add the egg, flour, and grated cheese to the drained zucchini. Stir until well combined; the mixture should be thick and slightly sticky. If it's too watery, gradually incorporate more flour.
  4. Heat a large skillet over medium heat. Add enough olive oil to coat the bottom of the pan.
  5. Spoon portions of the mixture into the skillet, flattening them slightly. Cook for 5 to 7 minutes or until the bottoms are golden brown.
  6. Flip the fritters and cook the other side for an additional 5 to 7 minutes until both sides are crispy.
  7. Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm, with your choice of dipping sauce.
