  • 1 rouleau de pâte feuilletée
  • 12 asperges vertes
  • 100 g de fromage (comme le fromage de chèvre ou le fromage à la crème)

Instructions

  1. Preheat your oven to 200°C.
  2. Boil salted water in a pot. Blanch the asparagus for 2-3 minutes until bright green and slightly tender. Transfer them to an ice water bath to maintain their crispness. Drain and set aside.
  3. On a lightly floured surface, roll out the puff pastry to an even thickness and cut it into squares, approximately 10 cm on each side.
  4. Place a tablespoon of cheese in the center of each pastry square, topping it with three asparagus spears. Fold the corners of the pastry over to encase the filling, sealing the edges well.
  5. In a small bowl, beat the egg yolk with a teaspoon of water. Brush the mixture over the tops of the pastries to create a golden crust.
  6. Arrange the feuilletés on a parchment-lined baking tray and bake in the preheated oven for 15 to 20 minutes, or until the pastry is puffed and golden brown.
  7. Allow to cool on a wire rack for about 5 minutes before serving. Enjoy warm!
