  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, softened
  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste
  • 1/2 cup (100 g) granulated white sugar
  • 1/2 tbsp culinary lavender
  • 4 oz (113 g) cream cheese
  • 1/4 cup (56 g) unsalted butter, softened
  • 1 cup (130 g) powdered sugar
  • 1/2 tbsp culinary lavender
  • 1 tsp vanilla bean paste
  • purple food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine 3 tablespoons of Earl Grey tea with 2 3/4 cups of all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Whisk until well combined and set aside.
  3. In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated white sugar until light and fluffy, about 3-4 minutes.
  4. Add 1 egg (at room temperature) and 2 teaspoons of vanilla bean paste to the creamed mixture. Mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Fold in 1/2 tablespoon of culinary lavender gently, ensuring it is evenly distributed throughout the dough.
  7. Using a cookie scoop, portion out the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 9 minutes, or until the edges are lightly golden and the centers are just set.
  8. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, prepare the lavender cream cheese frosting by beating together 4 oz of cream cheese, 1/4 cup of softened unsalted butter, and 1 cup of powdered sugar until smooth and creamy. Add in 1/2 tablespoon of culinary lavender, 1 teaspoon of vanilla bean paste, and purple food coloring if desired.
