Ingredients
Scale
- 3 tbsp (12 g) Earl Grey tea
- 2 3/4 cups (344 g) all purpose flour, spooned and leveled
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup (200 g) granulated white sugar
- 1 cup (227 g) unsalted butter, softened
- 1 egg, at room temperature
- 2 tsp vanilla bean paste
- 1/2 cup (100 g) granulated white sugar
- 1/2 tbsp culinary lavender
- 4 oz (113 g) cream cheese
- 1/4 cup (56 g) unsalted butter, softened
- 1 cup (130 g) powdered sugar
- 1/2 tbsp culinary lavender
- 1 tsp vanilla bean paste
- purple food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, combine 3 tablespoons of Earl Grey tea with 2 3/4 cups of all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Whisk until well combined and set aside.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated white sugar until light and fluffy, about 3-4 minutes.
- Add 1 egg (at room temperature) and 2 teaspoons of vanilla bean paste to the creamed mixture. Mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Fold in 1/2 tablespoon of culinary lavender gently, ensuring it is evenly distributed throughout the dough.
- Using a cookie scoop, portion out the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 9 minutes, or until the edges are lightly golden and the centers are just set.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the lavender cream cheese frosting by beating together 4 oz of cream cheese, 1/4 cup of softened unsalted butter, and 1 cup of powdered sugar until smooth and creamy. Add in 1/2 tablespoon of culinary lavender, 1 teaspoon of vanilla bean paste, and purple food coloring if desired.
- Once the cookies are completely cooled, frost each one generously with the lavender cream cheese frosting.
