Instructions
- In a medium bowl, combine ½ cup of Greek yogurt, 2 tablespoons of peanut butter, 1 tablespoon of honey, and ¼ teaspoon of vanilla extract. Stir until the mixture is smooth and well-blended, which should take about 1-2 minutes.
- Gently fold in ¼ cup of rolled oats and 1 tablespoon of chia seeds (if using). This should take another minute.
- Stir in 1–2 tablespoons of dark chocolate chips and a pinch of sea salt. Taste the mixture to see if you want to add a bit more sweetness or salt.
- Cover the bowl with plastic wrap and refrigerate the dough for 15–20 minutes.
- Using a spoon or cookie scoop, scoop out small portions and roll them into bite-sized balls. This should yield about 12-14 bites.
