- 6 slices of bread (white or brioche work best)
- 2 large eggs
- 1/4 cup (60ml) milk
- 1/2 teaspoon vanilla extract
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons (28g) unsalted butter, melted
Instructions
- Prepare the Cinnamon Sugar Mixture: In a small bowl, combine 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Mix well until evenly combined.
- Prepare the Egg Mixture: In a shallow dish, whisk together 2 large eggs, 1/4 cup (60ml) of milk, and 1/2 teaspoon of vanilla extract until smooth.
- Assemble the Roll-Ups: Take one slice of bread and flatten it with a rolling pin or your hands until it’s about 1/4 inch thick. Spread a thin layer of melted butter on the bread, then sprinkle a tablespoon of the cinnamon-sugar mixture over the butter. Starting from one end, roll the bread tightly to form a roll-up.
- Repeat the assembly for the remaining slices of bread, and secure each roll with a toothpick if needed.
- Cook the Roll-Ups: Heat a non-stick skillet over medium heat and add 1 tablespoon of the remaining melted butter. Dip each roll-up in the egg mixture, allowing the excess to drip off, and place it seam-side down in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy.
- Serve: Remove the roll-ups from the skillet and take out the toothpicks. Roll the hot roll-ups in the remaining cinnamon-sugar mixture for extra sweetness. Serve immediately.
