  • 500 ml de lait entier
  • 4 jaunes d'œufs
  • 120 g de sucre
  • 40 g de maïzena
  • sucre glace pour saupoudrer

Gradually pour the hot milk into the egg mixture while whisking to prevent curdling. Return the mixture to the saucepan and cook over low heat, whisking constantly until thickened (about 2-3 minutes). Remove from heat and let cool, covering with plastic wrap so a skin doesn’t form.
  2. Preheat the oven: Preheat your oven to 190°C.
  3. Prepare the pastry: On a lightly floured surface, roll out 500 g of puff pastry into a rectangle, ensuring it is uniformly thin.
  4. Cut and fill: Cut the pastry into strips approximately 5 cm wide. Spread 1-2 tablespoons of cooled custard on each strip, leaving a 1 cm border on the sides. Roll each strip tightly to form the cruffins.
  5. Arrange in the mold: Place rolled cruffins upright, touching each other, in a 12-cup muffin tin, ensuring they have enough room to rise.
  6. Bake: Bake at 190°C for 20-25 minutes until the tops are golden. Use a toothpick to check that the custard is set; it should come out clean.
  7. Cool and serve: Let the cruffins rest for 10 minutes in the tin before moving them to a cooling rack. Enjoy warm, optionally dusted with powdered sugar.
