- 500 g pommes de terre, épluchées et coupées
- 100 g fromage râpé
- 1 œuf
- 100 g chapelure
- 1 cuillère à café sel
- 1 cuillère à café poivre noir moulu

- Cook the potatoes: Place the 500 g of peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes until tender. Drain and let cool slightly.
- Prepare the mixture: In a large bowl, mash the potatoes. Add the 100 g grated cheese, 1 egg, 1 teaspoon salt, and 1 teaspoon ground black pepper. Mix until well combined. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes to firm up the mixture.
- Form the croquettes: Using your hands, take a small portion of the chilled mixture and shape it into balls the size of a walnut. Optionally, flatten them slightly to ensure even cooking.
- Heat the oil: In a shallow pan, heat oil to 175°C (medium heat), enough to cover the bottom of the pan by about 1 cm. Test the oil with a small piece of the mixture; if it bubbles and rises, it’s ready.
- Fry the croquettes: Fry the croquettes in small batches for about 4-6 minutes until golden brown and crispy, turning halfway through for even cooking.
- Drain and serve: Remove the croquettes from the oil and place on paper towels to absorb excess grease. Serve hot with a yogurt sauce or mayonnaise for dipping.
