Description

Discover the ultimate way to preserve parsley and keep it fresh for up to a year, ensuring you always have this vibrant herb ready to elevate your dishes. This chef-recommended method blends finely chopped parsley with olive oil and lemon juice, resulting in a fragrant infusion that locks in the parsley’s bright flavor. With just 30 minutes of prep, you’ll create a year-long supply of parsley that can effortlessly enhance soups, sauces, salads, and more, while preventing waste. Say goodbye to wilted parsley and embrace convenience without sacrificing taste!

Ingredients

Scale
  • 1 bouquet de persil frais
  • 200 ml d'huile d'olive
  • 1 citron, juiced (environ 50 ml)

Instructions

  1. Rinse the bouquet of fresh parsley thoroughly under cold water to remove any dirt. Gently shake off excess water and spread the parsley on a clean towel to dry completely for about 10 minutes.
  2. Once dry, use a sharp knife to finely chop the parsley, allowing the natural aromas to be released by letting it rest for a few minutes.
  3. In a bowl, combine the chopped parsley with 200 ml of olive oil and the juice from one lemon. Mix well until the oil is fully incorporated, resulting in a vibrant green mixture.
  4. Using a spoon, fill airtight containers or freezer bags with the parsley-oil mixture, leaving a small gap at the top for expansion as it freezes. Ensure all containers are tightly sealed to prevent air exposure.
  5. Place the filled containers in the freezer, where they can be stored for up to 12 months. Be sure to label each container with the date.
