  2. Mix the ingredients: In a 1-liter saucepan, combine the lemon zest, lemon juice, and sugar. Stir over medium heat for about two minutes until the sugar is fully dissolved.
  3. Cook the confiture: Add the water to the saucepan and bring the mixture to a boil. Reduce heat to medium-low and let simmer for 45 minutes, stirring occasionally. The confiture is ready when it thickens and coats the back of a spoon.
  4. Jar the confiture: Remove from heat and let it rest for 10 minutes. Pour the warm confiture into cleaned, sterilized glass jars and seal immediately.
