- 200 g dark chocolate
- 200 g white chocolate
- 6 eggs (3 for each mousse)
- 60 cl heavy cream (30 cl for each mousse)
- 24 ladyfingers
- Cocoa powder (for dusting)
Instructions
- Prepare the dark chocolate mousse: Melt the dark chocolate over a double boiler. Whisk together egg yolks with melted chocolate. Beat egg whites until stiff peaks form and fold into the mixture along with 15 cl of cold cream.
- Prepare the white chocolate mousse: Repeat the same process using white chocolate.
- Assemble: Line a charlotte mold with ladyfingers. Layer dark chocolate mousse followed by another layer of ladyfingers, then add white chocolate mousse on top. Finish with another layer of ladyfingers.
- Chill: Refrigerate for at least 4 hours before serving.
- Serve: Carefully unmold and dust with cocoa powder before serving.
