  • 75 g sucre
  • 75 g beurre

  • 10 g sel
  • 7 g levure sèche

Instructions

  1. In a large bowl, mix the flour and salt together.
  2. In a separate container, warm the milk to approximately 35°C (lukewarm) and mix in the yeast. Let it rest for 10 minutes until frothy.
  3. Add the eggs and sugar to the frothy milk mixture, then whisk until combined.
  4. Pour the liquid mixture into the bowl with the flour and mix with a spatula. Incorporate the melted butter until a smooth dough forms that pulls away from the bowl’s edges. If sticky, add a little extra flour.
  5. Cover the bowl with a clean kitchen towel and let the dough rise at room temperature for 2 hours, or until it doubles in size.
  6. On a floured work surface, gently deflate the dough. Divide it into 12 equal pieces and shape each into a ball. Arrange the balls in a greased muffin tin.
  7. Cover the brioches and allow them to rise for an additional hour, until nearly doubled in size.
  8. Preheat the oven to 175°C (347°F). Bake the brioches for 20-25 minutes until golden brown and they sound hollow when tapped underneath.
  9. Let them cool for 10 minutes in the tin before transferring them to a cooling rack. Store in an airtight container to maintain moisture.
