- 2 rouleaux pâte feuilletée
- 500 ml lait entier
- 125 g sucre
- 4 jaunes d'œufs
- 40 g fécule de maïs
- 1 gousse vanille
- 100 g sucre glace

- Preheat your oven to 200°C (390°F).
- Roll out the puff pastry on a baking sheet lined with parchment paper, and pierce with a fork to prevent excessive puffing.
- Bake for 10 minutes at 200°C, then reduce the temperature to 180°C (356°F), and continue baking for an additional 15-20 minutes until golden brown and crispy.
- While the pastry is baking, prepare the pastry cream: heat the milk with the split vanilla bean in a saucepan.
- In a bowl, whisk the egg yolks with sugar and cornstarch until smooth.
- Once the milk starts to simmer, remove it from heat, and gradually whisk it into the egg yolk mixture.
- Return the mixture to the saucepan and cook over low heat, whisking constantly until it thickens (about 5 minutes).
- Allow the baked pastry to cool, then cut into rectangles.
- Layer the pastries with pastry cream in between, creating stacks of three layers.
- Dust the assembled mille-feuille with powdered sugar before serving.
