  • 125 g beurre froid
  • 100 g sucre
  • 1 œuf
  • 150 g figues séchées
  • Pincée de sel

Instructions

  1. Preheat the oven to 220°C (428°F).
  2. Chop the dried figs into small pieces and set aside.
  3. In a large bowl, sift together the flour and sugar. Add a pinch of salt and mix well to combine and aerate.
  4. Add the cold, cubed butter into the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
  5. Create a well in the center of the mixture and crack in the egg. Add the chopped figs. Using a spatula, mix until just combined; avoid over-mixing.
  6. On a baking sheet lined with parchment paper, drop spoonfuls of dough, leaving space for cookies to spread.
  7. Bake for 12 to 15 minutes until golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
