  • 125 g farine tout usage
  • 1 cuillère à café poudre à lever
  • 1 cuillère à café sel
  • 250 ml lait
  • 1 œuf

Instructions

  1. In a large bowl, combine the fine cornmeal, all-purpose flour, baking powder, and salt. Mix well.
  2. In another bowl, whisk together the milk and egg (or applesauce).
  3. Pour the liquid mixture into the dry ingredients, stirring gently until just combined; it's okay if some flour streaks remain.
  4. Let the batter rest for about 10 minutes to enhance texture.
  5. Heat oil in a fryer or large pot over medium heat to 175°C (347°F). To check readiness, drop a small spoonful of batter into the oil; it should float and bubble.
  6. Carefully drop spoonfuls of batter into the hot oil, frying in small batches to prevent overcrowding. Fry for 3 to 4 minutes on each side, or until golden brown and puffy.
  7. Remove beignets with a slotted spoon and drain on paper towels to remove excess oil.
  8. Serve immediately while hot, or store in an airtight container at room temperature for up to two days.
