Ingredients

Scale
  • 200 g noix de coco râpée
  • 100 g cacao en poudre non sucré
  • 100 g huile de noix de coco fondue
  • 4 œufs
  • 1 c. à café extrait de vanille
  • 1 c. à café bicarbonate de soude
  • A pinch of salt

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. In a large mixing bowl, combine the shredded coconut, cocoa powder, baking soda, and salt. Whisk until well mixed and uniform in color.
  3. In another bowl, whisk the eggs, melted coconut oil, and vanilla extract until smooth and glossy.
  4. Pour the wet mixture into the dry ingredients and stir gently just until combined—do not overmix.
  5. Grease a 23×33 cm (9×13 inches) baking pan or line it with parchment paper. Pour the batter into the pan and level the top with a spatula.
  6. Bake for 25 to 30 minutes, or until the edges pull slightly away from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the bars cool in the pan for about 1 hour before slicing them into 16 equal portions.
  8. Store the cooled bars in an airtight container at room temperature for up to 5 days.

Keywords: You can substitute melted coconut oil with olive oil, though the flavor profile will change slightly. For extra flavor, consider adding a pinch of cinnamon or chopped nuts to the mixture. If you prefer a sweeter bar, feel free to add a low-carb sweetener of your choice.
