- Peel the bananas and slice them into rounds approximately 2.5 cm thick. Place the slices on a baking sheet lined with parchment paper and freeze for at least 2 hours.
- In a heatproof bowl, combine the dark chocolate and peanut butter. Melt over a double boiler on low heat, stirring regularly until smooth and glossy (about 5 to 7 minutes).
- Remove the banana slices from the freezer. Using a fork, dip each slice into the melted chocolate mixture, ensuring they are fully coated. Remove excess chocolate by tapping them gently against the bowl's edge.
- Before the chocolate sets, sprinkle shredded coconut on top of the coated banana slices if using.
- Return the chocolate-covered bananas to the baking sheet and freeze for an additional 30 minutes, or until the chocolate is fully hardened.
- Serve immediately after removal from the freezer. Store leftovers in an airtight container in the freezer for up to 2 weeks.
