Description

These Taco Ranch Bites are a flavorful and easy appetizer featuring seasoned ground beef or turkey mixed with a creamy ranch blend, all served in crispy phyllo pastry cups. Ideal for parties or game day, they are sure to impress your guests!


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning (about 1 ounce)
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup ranch dressing
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • 1 package of mini phyllo pastry cups (about 1520 cups)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  2. Drain any excess fat.
  3. Add taco seasoning and 2/3 cup of water. Stir well and let it simmer for about 5 minutes until thickened.
  4. Remove from heat and let cool slightly.
  5. In a medium bowl, combine softened cream cheese, sour cream, and ranch dressing. Blend until smooth.
  6. Fold in shredded cheddar cheese, diced tomatoes, and sliced black olives (if using). Set aside.
  7. Preheat oven to 350°F (175°C).
  8. Place mini phyllo pastry cups on a baking sheet.
  9. Add a spoonful of taco meat mixture into each cup.
  10. Top with a dollop of the creamy ranch mixture and sprinkle extra cheddar cheese on top.
  11. Bake for 15-20 minutes until phyllo cups are golden brown and cheese is melted.
  12. Let cool for a few minutes.
  13. Sprinkle with chopped green onions and fresh cilantro.
  14. Serve warm or at room temperature, optionally with ranch dressing or salsa on the side.

  • Customize the filling with black beans, corn, or jalapeños for added flavor.
  • For a vegetarian option, replace the meat with beans and veggies.
