Description

These Chipotle BBQ Pulled Beef Sliders are a delicious combination of smoky chipotle heat and rich BBQ sauce, perfect for any gathering. Enjoy tender, flavorful beef piled high on soft slider buns for a satisfying bite.

Ingredients

Scale
  • 34 pound chuck roast
  • 23 whole chipotle peppers in adobo sauce, minced
  • 12 tablespoons adobo sauce
  • 1 ½ to 2 cups BBQ sauce
  • Soft Hawaiian rolls (slider buns)
  • 1 large yellow onion, finely diced
  • Several cloves of garlic, minced
  • 1 cup beef broth
  • 2 tablespoons apple cider vinegar
  • 12 tablespoons brown sugar or maple syrup (optional)
  • Smoked paprika
  • Cumin
  • Chili powder
  • Salt
  • Black pepper
  • Pickles (dill or bread and butter)
  • Creamy coleslaw
  • Crispy fried onions
  • Provolone or cheddar cheese (optional)

Instructions

  1. Prepare the Beef: Pat the chuck roast dry with paper towels and season it all over with salt, black pepper, smoked paprika, and cumin.
  2. Sear the Beef: Heat vegetable oil in a large Dutch oven over medium-high heat. Add the seasoned beef and sear on all sides until browned, about 3-4 minutes per side. Remove and set aside.
  3. Sauté the Aromatics: In the same pot, add the diced onion and cook over medium heat until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
  4. Build the Flavorful Sauce: Stir in minced chipotle peppers and adobo sauce, remaining smoked paprika, and cumin. Cook for about a minute, then pour in beef broth, apple cider vinegar, and BBQ sauce. Add optional sweetener if using and stir to combine.
  5. Braise the Beef: Return the seared beef to the pot, ensuring it’s nestled into the sauce. For Oven Method, bring to a simmer, cover, and cook at 300°F (150°C) for 3-4 hours. For Slow Cooker Method, transfer to a slow cooker and cook on low for 6-8 hours. For Instant Pot Method, pressure cook on high for 60-75 minutes.
  6. Shred the Beef: Once tender, remove the beef and shred it using two forks, discarding any large pieces of fat.
  7. Combine and Finish: Return shredded beef to the pot and stir to coat in the sauce. Adjust seasoning as needed.
  8. Assemble the Sliders: Lightly toast slider buns if desired. Pile a generous spoonful of pulled beef onto the bottom half of each bun, add toppings, and cap with the top bun. Serve immediately.

Keywords: For deeper flavor, let seasoned beef sit at room temperature for 30 minutes before searing. Control the heat by adjusting the amount of chipotle peppers used. Toasting the buns prevents sogginess and adds texture.
