- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
- Lemon wedges, for serving
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
- Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander. Do not rinse.
- In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
- Add minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
- Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on one side until pink. Flip and cook for another 1-2 minutes. Remove shrimp from skillet and set aside.
- In the same skillet, pour in white wine (or chicken broth) and bring to a simmer, scraping up browned bits from the pan.
- Let simmer for 2-3 minutes to reduce slightly.
- Squeeze in lemon juice and stir in remaining 2 tablespoons of butter until melted and incorporated.
- Return shrimp to the skillet, add chopped parsley, and toss to coat. If the sauce is too thick, add reserved pasta water to loosen.
- Add drained pasta to the skillet with shrimp and sauce. Toss gently to combine.
- If the pasta seems dry, add more reserved pasta water until desired consistency is reached.
- Taste and adjust seasoning with salt, pepper, or lemon juice as needed.
- Divide shrimp scampi pasta into bowls. Garnish with additional parsley and grated Parmesan cheese if desired.
- Serve with lemon wedges on the side for extra freshness.
