  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)
  • Lemon wedges, for serving

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
  2. Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander. Do not rinse.
  4. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
  5. Add minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  6. Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on one side until pink. Flip and cook for another 1-2 minutes. Remove shrimp from skillet and set aside.
  7. In the same skillet, pour in white wine (or chicken broth) and bring to a simmer, scraping up browned bits from the pan.
  8. Let simmer for 2-3 minutes to reduce slightly.
  9. Squeeze in lemon juice and stir in remaining 2 tablespoons of butter until melted and incorporated.
  10. Return shrimp to the skillet, add chopped parsley, and toss to coat. If the sauce is too thick, add reserved pasta water to loosen.
  11. Add drained pasta to the skillet with shrimp and sauce. Toss gently to combine.
  12. If the pasta seems dry, add more reserved pasta water until desired consistency is reached.
  13. Taste and adjust seasoning with salt, pepper, or lemon juice as needed.
  14. Divide shrimp scampi pasta into bowls. Garnish with additional parsley and grated Parmesan cheese if desired.
  15. Serve with lemon wedges on the side for extra freshness.
