Instructions

  1. Rinse the long-grain white rice under cold water in a fine-mesh strainer until the water runs clear. Set aside to drain.
  2. In a medium saucepan, bring 2 cups of chicken broth to a boil over medium-high heat. Add the rinsed rice, stir briefly, reduce heat to low, cover, and simmer for 18-20 minutes until tender and liquid is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  3. In a large skillet or Dutch oven, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for 5-7 minutes until softened and onion is translucent.
