- 1 lb lean ground beef (90/10 or 93/7)
- 2–3 tablespoons olive oil
- 1 lb Yukon Gold or Russet potatoes, cut into 1-inch pieces
- 1 teaspoon salt (divided)
- 1/2 teaspoon black pepper (divided)
- 1/2 teaspoon paprika (optional)
- 1/4 cup beef broth or water
- 1 onion, chopped
- 2–3 garlic cloves, minced
- Fresh rosemary, chopped
- Fresh thyme, chopped
- 1 lb fresh broccoli florets
- Fresh parsley or chives (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and thoroughly dry your potatoes. Cut them into uniform 1-inch bite-sized pieces.
- In a large bowl, toss the potato pieces with 2-3 tablespoons of olive oil, fresh rosemary, thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Spread the seasoned potatoes in a single layer on a large baking sheet and roast for 25-30 minutes, flipping them halfway through.
- While the potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chopped onion and sauté for 3-5 minutes until it starts to soften.
- Add the minced garlic and cook for another minute until fragrant.
- Add the lean ground beef to the skillet, breaking it up with a spoon and cooking until fully browned, about 6-8 minutes.
- Drain any excess fat from the pan and season the ground beef with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and any other desired seasonings.
- Pour in about 1/4 cup of beef broth or water and let it simmer for a couple of minutes.
- About 10-15 minutes before the potatoes are due to finish roasting, start steaming your broccoli in a pot with a steamer basket.
- Cover the pot and steam the broccoli for 3-5 minutes until tender-crisp and vibrant green.
- Once everything is ready, divide the herb roasted potatoes, savory ground beef, and steamed broccoli among plates.
- Garnish with a sprinkle of fresh parsley or chives if desired and enjoy!
