Instructions
- Start by chopping the broccoli into bite-sized florets. Dice one onion and mince two cloves of garlic. Cut the beef bacon into small pieces.
- In a large pot, cook the beef bacon over medium heat until it's crispy. This should take about 5-7 minutes. Once done, remove the bacon and let it drain on a paper towel, leaving the rendered fat in the pot.
- In the same pot, add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped broccoli and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just half of it and leave the rest as is.
- Stir in the heavy cream and shredded cheddar cheese. Mix until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.
- Finally, return the crispy beef bacon to the pot and stir it in, or save it for topping the bowls when serving.
- Ladle the soup into bowls and garnish with additional cheddar cheese and crispy beef bacon on top. Enjoy while warm!
