  • 1 teaspoon vanilla extract

  • 1 tablespoon sugar (optional)
  • Butter or oil for frying
  • Maple syrup for serving

Instructions

  1. Use a rolling pin to flatten each slice of bread to about ¼ inch thick.
  2. Cook the breakfast sausages according to package instructions, then crumble them into small pieces.
  3. Combine the crumbled sausage with shredded cheese (optional) in a bowl.
  4. In a large mixing bowl, crack the eggs and whisk until well beaten.
  5. Pour in the milk, vanilla extract, and ground cinnamon. Add sugar if desired, and whisk until smooth.
  6. Place 1-2 tablespoons of the sausage filling at one end of a flattened slice of bread.
