Instructions
- Use a rolling pin to flatten each slice of bread to about ¼ inch thick.
- Cook the breakfast sausages according to package instructions, then crumble them into small pieces.
- Combine the crumbled sausage with shredded cheese (optional) in a bowl.
- In a large mixing bowl, crack the eggs and whisk until well beaten.
- Pour in the milk, vanilla extract, and ground cinnamon. Add sugar if desired, and whisk until smooth.
- Place 1-2 tablespoons of the sausage filling at one end of a flattened slice of bread.
- Roll the bread tightly around the filling, tucking in the sides as you go. Repeat with remaining slices.
