Instructions

  1. Prepare Your Pie Crust: Roll out your homemade crust and fit it into a 9-inch deep-dish pie plate. Blind bake it by pricking the bottom with a fork, lining with parchment paper, and filling with pie weights. Bake at 375°F (190°C) for 15-20 minutes until lightly golden, then remove weights and parchment and bake for another 5-10 minutes. Let it cool completely.
  2. Preheat Oven & Prep for Baking: Reduce the oven temperature to 325°F (160°C) and place an oven rack in the center.
  3. Melt the Butter: Melt the unsalted butter in a small saucepan or microwave-safe bowl and set aside to cool slightly.
  4. Whisk the Eggs: In a large mixing bowl, lightly whisk the large eggs until just combined and pale yellow.
  5. Combine Wet Ingredients: Add the honey, heavy cream, cooled melted butter, and vanilla extract to the whisked eggs and whisk gently until smooth.
  6. Add Sweetness and Salt: Stir in the granulated sugar and a generous pinch of flaky sea salt into the wet mixture until the sugar is mostly dissolved.
  7. Fill the Crust: Carefully pour the honey mixture into the cooled, blind-baked pie crust. Place the pie on a baking sheet.
