Ingredients

  • 4 firm, brightly colored carrots
  • 2 English or Persian cucumbers
  • 1/4 cup fresh dill, finely chopped
  • 3 tablespoons apple cider vinegar or white wine vinegar or rice vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon granulated sugar or pure maple syrup or agave nectar
  • Fine sea salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash and peel the carrots thoroughly. Julienne or grate the carrots into a medium-sized mixing bowl.
  2. Wash the cucumbers. If using English or Persian cucumbers, slice them thinly into rounds or half-moons, or dice them into small, uniform pieces. If using a standard cucumber, peel it, slice it lengthwise, scoop out the seeds, and then slice or dice the flesh. Add the prepared cucumbers to the bowl with the carrots.
  3. Finely chop the fresh dill and add it to the bowl with the carrots and cucumbers.
  4. In a small bowl or jar, combine the vinegar, olive oil, sweetener, salt, and pepper. Whisk together until the sugar is dissolved and the dressing is emulsified.
  5. Pour the dressing over the carrots, cucumbers, and dill in the mixing bowl. Gently toss all the ingredients together until evenly coated with the dressing.
  6. Cover the bowl and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
