This Easy One Pot Smoked Sausage And Rice Recipe is your new weeknight hero, combining juicy smoked sausage with perfectly cooked rice and savory seasonings in a single pot. Enjoy minimal cleanup and maximum flavor for a hearty meal that satisfies hungry bellies after a long day.

Ingredients

Scale
  • 1 package smoked beef sausage, sliced into ½-inch thick rounds
  • 1 cup long-grain white rice, rinsed
  • 2 cups vegetable or chicken broth
  • 1 medium yellow onion, finely chopped
  • 23 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can petite diced tomatoes, undrained
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh chopped parsley or cilantro for garnish

Instructions

  1. Slice the smoked beef sausage into uniform ½-inch thick rounds.
  2. Chop the onion and bell peppers, and mince the garlic.
  3. Rinse the long-grain white rice under cold water until it runs clear.
  4. Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat and add about a tablespoon of olive oil.
  5. Add the sliced smoked beef sausage to the pot and cook, stirring occasionally, until browned and slightly crispy, about 5-7 minutes. Remove the sausage and set aside.
  6. Reduce the heat to medium and add the chopped onion and bell peppers to the pot. Cook until they start to soften, about 5-7 minutes.
  7. Stir in the minced garlic, dried oregano, and smoked paprika, and cook for another minute until fragrant.
  8. Add the can of undrained petite diced tomatoes to the pot and let it simmer for a minute, scraping up any browned bits from the bottom.
  9. Stir in the rinsed rice and coat the grains with the aromatics and tomato mixture.
  10. Pour in the broth and stir to combine, ensuring the rice is evenly distributed at the bottom of the pot.
  11. Bring the liquid to a strong simmer, then return the browned sausage to the pot, nestling it into the rice.
  12. Reduce the heat to low, cover the pot tightly, and let it simmer for about 18-20 minutes without lifting the lid.
  13. After cooking, remove the pot from heat and let it rest with the lid on for an additional 5-10 minutes.
  14. Fluff the rice gently with a fork, stir in the sausage, and garnish with fresh chopped parsley or cilantro before serving.

Keywords: For added flavor, don't skimp on browning the sausage. Feel free to customize the vegetables and adjust the heat with red pepper flakes or hot sauce. For a cheesy twist, stir in shredded cheese after fluffing the rice.
