Instructions

  1. Step 1
    Combine 1 cup water and 1 cup sugar in a saucepan over medium heat; stir until dissolved. Stir in 3 tbsp pumpkin puree and 1 tbsp pumpkin pie spice. Bring to a gentle simmer for 5-7 minutes. Remove from heat, stir in 1 tsp vanilla extract, and cool completely. Strain into an airtight container and refrigerate for up to 2 weeks.
  2. Step 2
    Chill your martini or coupe glass. Brew 2 oz strong espresso (or extra strong hot coffee, cold brew concentrate) and allow it to cool completely before use.
  3. Step 3
    In a cocktail shaker, combine 2 oz cooled espresso, 1.5 oz non-alcoholic spirit alternative, 1 oz non-alcoholic coffee liqueur alternative, and 0.75 oz homemade pumpkin spice simple syrup (adjust to taste). Optionally, add a splash of creamer for a creamy mocktail.
  4. Step 4
    Fill the shaker 2/3 full with fresh ice. Secure lid and shake vigorously for 15-20 seconds until the shaker is frosty and the liquid is frothy. Strain the mixture into your chilled glass, double straining for extra smoothness if desired.
  5. Step 5
    Garnish with 3 whole coffee beans, a light dusting of pumpkin pie spice or cinnamon, or a cinnamon stick. For a decadent touch, add a dollop of whipped cream and a sprinkle of spice.
